A three-time finalist in the esteemed Euro-Toques Ireland competition and former sous chef at Aniar and Lignum, Attila's pedigree speaks volumes. His dedication to culinary excellence has been acknowledged with accolades such as the highly commended title of best young chef at the Food and Wine Awards 2023.

At Daróg, he artfully blends his global expertise with the freshest local ingredients, ensuring that our "small oak tree" remains deeply rooted in the culinary traditions of the West of Ireland, he crafts dishes that are a harmonious symphony of taste and texture. Iseult Gumbleton Fitzsimons, an integral member of our esteemed wine bar family at Daróg. With a wealth of experience in the hospitality industry, Iseult's journey has taken her across continents, immersing herself in the vineyards of Italy for a transformative year. During her time in Italy, she had the privilege of working alongside her favorite biodynamic producer, Fabrizio Iuli, in the picturesque region of Piedmont, further deepening her appreciation for the artistry of winemaking.

Recently, Iseult has embarked on a journey of continuous learning and refinement, completing the prestigious Diploma in Food & Wine Synergy course and achieving WSET Level 2 Certification. These accolades attest to her unwavering dedication to mastering the intricate nuances of food and wine pairing, enriching her ability to curate unforgettable experiences for our patrons.

With her passion for wine and hospitality shining brightly, Iseult brings a unique blend of expertise and warmth to Daróg, elevating every visit into a memorable occasion.

Edel McMahon-Lukács

Edel McMahon-Lukács is the owner and creative driving force behind Daróg Wine Bar. With over fifteen years of experience in design and marketing, Edel has made her mark at top spots like Aniar, Cava Bodega, Armorica, and il Vicolo. Now, she brings her passion for great food, wine, and design to Daróg.

Edel sees Daróg as more than just a wine bar—it's a space for local artists to shine. Our Gallery Wall, inspired by her love for art and community, showcases the incredible talents of local artists giving them a platform to share their work.

Under Edel’s vision, Daróg blends wine, food, and creativity into a unique experience that delights the senses and celebrates artistry.

Chloe O’Shea

Chloe O'Shea, the culinary talent hailing from the picturesque town of Celbridge in Co. Kildare. Chloe's culinary journey began at a tender age, sparked by a deep-seated love for the art of cooking. Her passion led her to pursue higher education in culinary arts at TUD Tallaght, where she not only earned her higher certification but also graduated with a bachelor's degree, laying a solid foundation for her future endeavors.

Drawing from her diverse experiences, including positions at esteemed establishments such as Peploe's on St. Stephen's Green in Dublin and Aniar in Galway, Chloe has meticulously honed her skills and refined her palate. Now, she graces the kitchen of Daróg, where a bounty of fresh produce and ingredients awaits, serving as her canvas for culinary exploration and innovation.
